FAVORITE SALADS


Watermelon Salad

Ingredients: 2 cups of cubed seeded ORGANIC watermelon 4-6 cups of ORGANIC arugula 1/4 cup of Organic goat cheese OR Feta Balsamic Syrup/Glaze, drizzle as preferred *Pumpkin Seeds (as much or as little as you want) Directions: Toss the arugula with the watermelon, sprinkle on the cheese, and drizzle the balsamic syrup/glaze. Add pumpkin seeds for some added plant derived fats!



Kale Salad (I PROMISE it’s YUMMY!)

Ingredients: 6 cups of organic BABY kale, Grab bunches of it and cut in julienne slices 1 organic lemon, squeeze juice onto the greens Black pepper (sprinkle on the salad) Salt (lightly add to salad to take out the bitterness of the kale) ½ avocado (you can add as much as you like), slice in skinny slices 1 tbsp. virgin olive oil ¼ cup of parmesan cheese grated, or freshly grated (add more or less to taste) Directions: Toss salad and then SQUISH the avocado into the salad, it becomes very wet and mushy, which makes it much tastier! Beware, it’s messy!



Asian Salad

Ingredients: ¼ of a head of organic purple cabbage, sliced thinly ¼ of a head of organic green cabbage, sliced thinly ½ cup or more of shredded organic carrots 4 organic spring onions chopped up Roasted sesame seeds 2-3 tbsp or however much you want Rice wine vinegar ¼ cup or however much you want Directions: Toss and let sit for a good hour before eating. Tastier if you put it in the refrigerator overnight! Crunchy and yummy!
